Barbara’s Symphony
In the spirit of Barbara of Celje, a queen with three crowns, her namesake culinary symphony brings a surprise. At Gostilna Oštirka, it is also a symbolic nod to Barbara’s prominent role in the establishment of a renowned knightly Order of the Dragon.
Beef cheeks enjoy the company of local vegetables, barley, a pinch of aurora hops, and green pea microgreens. A celery and apple foam and shallot crumble round off the symphony of perfect flavours.
